- 1 lb ground beef
- 2 red chilies, 1 chopped and 1 sliced
- 1 inch ginger, grated
- 1 egg
- 1 tablespoon sunflower oil or 1 tablespoon vegetable oil
- 1 - 1 1⁄2 tablespoon Thai red curry paste
- 14 ounces reduced-fat coconut milk
- 8 ounces bamboo shoots, drained
- 5 ounces fresh green beans, trimmed
- 1 lime, jucied
- 1 ounce fresh basil leaf
- 1 lime, cut into wedges to be served on the side
directions
- Put the ground beef in large bowl with chopped chile, ginger and egg, then season with salt and pepper. Mix well with your hands and shape into 20 meatballs.
- Heat the oil in large non-stick frying pan, then brown the meatballs for 5mins. Take out of pan onto a plate. Add curry past to the pan and fry for 1 minute. Then pour in the coconut milk and half a can of water to hot pan. Bring back to a boil and stir to make a smooth sauce.
- Return the meatballs to the pan with bamboo shoots and green beans. Simmer for 5 minutes until the beans are just tender and the meatballs are cooked through. Season the sauce with salt, pepper and lime juice. Then tear the basil leaves in 1" pieces. Scatter basil leaves and sliced chiles on top. Serve over Rice or Noodles.
