Red Wine Chicken

"This is an easy and quick week night meal that I always have the ingredients on hand to make. The sauce is really flavorful and always a crowd pleaser. Plus having a glass or two of red wine left over to sip with the meal...or while cooking is a nice bonus. I like to add about a cup of uncooked orzo right into the sauce during the final 15 minutes of cooking."

  • Over medium-high heat, start a rue by wisking together the olive oil and flour in a medium pot. rue should be somewhat moist and not cakey.
  • Add a splash of red wine and stir vigorously.
  • Continue stirring and blending the rue with the wine - continue adding wine.
  • When you have a stable mixture, stir in soy sauce, ginger, oregano, and brown sugar.
  • Add chicken and reduce heat to medium-low and simmer for 30 minutes, stirring and adding wine as needed every 10 minutes.
  • Enjoy!
