  1. I also added a tsp of cranberry extract, which I had on hand; but you could possibly add cranberry juice or use chocolate extract if you can find it too.
  2. Preheat oven to 375*F.
  3. Grease a 12-cup muffin tin.
  4. Cobine dry ingredients in a medium mixing bowl.
  5. Combine remaining ingredients, except cranberries, in a seperate bowl.
  6. Add liquid ingredients to dry, mixing just until the dry ingredients are moist.
  7. Stir in cranberries.
  8. Fill muffin cups 2/3 of the way full with batter.
  9. Bake for about 25 minutes or until muffins test done.
  10. Cool 5 minutes in pan; and then remove to wire rack to cool completely.
