Refreshing Cucumber and Tomatoe Salad

Directions

  1. Put the cucumber slices in a strainer and sprinkle with the 3/4 tsp salt, coat well.
  2. Place the strainer over an empty bowl.
  3. Put in refrigerator in order to allow the cucumbers to drain their liquid for about 40-45 minutes.
  4. After draining time, remove any excess moisture from the cucumbers in the strainer.
  5. Place the cucumbers in a large bowl.
  6. Add the tomatoes and onions.
  7. In a small bowl, whisk together lemon juice, cider vinegar, olive oil, Dijon mustard, splenda, dill weed, pepper and cayenne pepper.
  8. Pour over the salad mixture and toss.
  9. Sprinkle with the crumbled feta cheese.
