Refrigerator Bran Muffins

"The two amounts of shortening are added together and 36 - 48 muffins are an estimate. This has been in my family for years. It keeps in the frig. for over a month & all my kids (even the junk food junkie) loves it. You can add raisins or other goodies if desired. This is easy to mix by hand and will keep a month or more in the frig."

  • Cream sugar, shortening and eggs.
  • Add milk and water, then beat.
  • Add both bran cereals (buds and flakes) & beat.
  • Blend together flour, soda, & salt, then add to bran mixture.
  • Refrigerate overnight.
  • Before using, stir to mix in all dissolved bran.
  • Fill muffin tins 3/4 full.
  • Bake @ 400, 20 to 25 minute or 425, 15 to 20 minute.
  • Keep batter in refrigerator ready for use in the morning. Keeps about one month.
