“This is a very popular recipe in Sweden, using two popular ingredients- reindeer meat and chanterelle mushrooms. If you can't find reindeer, venison will work just as well. For a traditional dinner, serve with mashed potatoes and lingonberry compote.”

Directions

  1. Brown the chanterelle mushrooms and onion with the juniper berries in butter.
  2. Add the cream, and cook until reduced by half. Set aside.
  3. In another skillet, brown the sliced reindeer in more butter. Work in batches if needed, so the meat browns, not steams.
  4. Pour the sauce over the browned meat, and let simmer for a few minutes.
  5. Season to taste with salt and white pepper.
  6. Sprinkle with parsley.
