Restaurant Style Chicken Tikka Masala

"If you're looking for a chicken tikka masala recipe that tastes just like the one you get at your local curry house, this is about as close as you can come without buying a tandoori oven. The trick is to add a little liquid smoke to the marinade (to simulate tandoori cooking) and slightly blacken the chicken on a grill or under the broiler."

  • Mix marinade ingredients together. Pour over chicken and stir to coat. Cover and refrigerate for 1 to 2 hours.
  • Put the chicken pieces on a metal skewer and light your broiler (you may also grill them on your barbecue) and cook until the juices run clear and the meat is blackened in places, turning occasionally. Remove from the skewers and set aside.
  • Heat the oil over medium heat and sauté the onions and jalapeno until soft. Add the ginger and garlic and cook for 30 seconds, stirring constantly.
  • Add the tomatoes, tomato paste and spices and cook on medium low heat. Add water if necessary to prevent sticking. When the ingredients are well blended and the sauce is fragrant, add the chicken and the cream. Heat through but do not boil.
  • Garnish with chopped fresh cilantro and serve over basmati rice.

  1. This should not have chili powder in it. It made the dish taste like bbq sauce. Peanut oil should be used in place of vegetable oil. If you cannot use peanut oil than you should use real butter.
     
  2. In response to the review by Keagan Marie: When an Indian recipe calls for "chili powder", it means something like cayenne, not the American version you put in chili. I made that mistake a few times!
     
  3. Very yummy. I couldn't find liquid smoke so I left it out. When I make it again, I'll put in another jalapeno to heat it up a bit, it was a tad too mild. I also used yogurt instead of heavy cream and it worked great. I used a can of diced tomatoes instead of the tomato too. The fresh cilantro really makes it delicious.   4. Really liked this, definitely a hit! I took Keagan's advise and used butter instead of olive oil. And I managed to forget the jalapeño when shopping and used chilli flakes instead of power. As we like mild to medium hotness, I only put in half the chilli to be safe and found that it turned out medium, perfect! Was also my first time using liquid smoke and found that an interesting ingredient!
     
  5. Chicken Tikka Masala, when it's made right in a curry house, is an all-time favorite dish of mine. Never tried making it before. Out of the dozens of recipes I found on Recipezaar, I started with the one that said 'Restaurant Style'. It's spectacular. My gf''s expression when she tried it made all the prep work worthwhile. She wants it all the time now. I did vary the recipe slightly by: 1) using more garlic and ginger and tomato paste than recommended. I know their potential well. 2) adding no salt where indicated in the sauce. The additional tomato paste I used made up for it. 3) using habanero peppers rather than jalapenos, just because they add so much more flavor, and heat, which I like. Thank you, GiddyUpGo!

I am a mother of two with another one on the way! I am married to an Englishman and we own a small business in our local area.
