Rf2's Chocolate Chocolate Chip Oatmeal Cookies

"After searching for coconut oil recipes on the web, I found a cookie recipe that Fran, from Toronto, Canada posted. It was her recipe that I based my modifications off of. This is my husband's FAVORITE cookie. It has all the tastes we love-- chocolate, oats, sprouted wheat flour, and coffee. These are also very large-- 3" in diameter! (you can use maple syrup or honey in place of the evaporated cane juice and stevia extract)"

  • Preheat oven to 350°F degrees.
  • Grease cookie sheet(s) with additional coconut oil or use well seasoned stoneware pans (I do) and set aside.
  • Mix the flour, cocoa, oats, salt, chocolate chips, and nuts in a large bowl. In another bowl or in a Vita-Mix/blender, mix the other ingredients.
  • Pour the wet ingredients into the dry ingredients and mix until well combined. The dough will be VERY stiff.
  • Roll dough into golf-ball sized balls, place on prepared cookie sheets and flatten to about 1/2" thickness.
  • Bake in preheated oven for 18-20 minutes.
  • Remove from sheets to wire rack to cool.
  • (Prep time does not include preparing the raw ingredients).
