- 2 cups rhubarb, cut in 1/2-inch pieces
- 1⁄2 cup sugar
- 1⁄2 cup shortening
- 1 1⁄2 cups sugar
- 1 egg
- 2 cups flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 cup buttermilk
directions
- Mix rhubarb and 1/2 cup sugar; set aside. Cream shortening, sugar, and egg. Mix and add dry ingredients, alternating with buttermilk. Add vanilla and rhubarb mix. Grease and flour a 9x13 pan. Bake at 350* for about 35 minute Good with cream cheese frosting.
