Rhubarb Chutney

- 1 chopped red bell pepper
- 1 large shallot, chopped
- 1⁄2 cup honey
- 1⁄4 cup golden raisin
- 1⁄4 cup cider vinegar
- 1 tablespoon minced ginger
- 1 tablespoon minced garlic
- 1 teaspoon cumin
- 1⁄4 teaspoon cinnamon
- 1⁄4 teaspoon red pepper flakes
- 1 lb coarsely chopped rhubarb, about 3 1/4 cups
- 1⁄2 cup chopped cilantro
- salt and pepper, to taste
directions
- Combine the first eight ingredients in a saucepan. Bring to a boil, reduce heat and simmer for 5 minutes.
- Add the rhubarb and cook until the pieces are starting to fall apart, about 2 minutes.
- Transfer to a bowl, and let cool. Season with salt and pepper and stir in the cilantro.

My screen name is a diminutive in Lithuanian for bread, so you won't be suprised to learn that I love to bake bread. In recent years I have been baking a lot of sourdough breads and have several starters sitting in my refrigerator. But I like to cook a lot of other things, as well, especially from various cultures.
