directions

  • Combine sugar and cornstarch; mix well.
  • Add rhubarb nutmeg(optional), butter and grated orange rind.
  • Let stand 10 minutes.
  • Place in 9x9 baking dish.
  • Bake in 375F preheated oven for 10 minutes.
  • Mix cobbler topping ingredients and.
  • drop"blobs" of topping on fruit.
  • Bake at 350F for 25 to 35 minutes.
  • Serve warm.

  2. Yummy, Yummy, what a great recipe you have there, have made this already twice, the only thing I did different was I doubled the cobbler topping. Had with frozen vanilla yogurt, and it was fantastic. Thank you for posting such a great recipe.
     
  3. The topping of this is the best I have ever tried - I've since used it on a peach cobbler and it was fantastic. The rhubarb filling is also absolutely delicious, but a little sweet, so next time I'll use a little less sugar. This is a definite make-again :)
     
  4. The rhubarb base of this recipe is fantastic! I was less keen on the cake layer on top - there was a puddle of butter floating on the top of it when I took it out of the oven. I'll cut down on the butter next time, or just use the base and put a meringue on top.
     
  5. Well technically I did not make this dish. My dear friend Miss Nola did. She is 71 and asked me to find her a recipe for rhubarb cobbler and I came up with this one because the ingredients were closest to what she remembered using years back in West Virginia. However, she did ask me how does it get rated and I explained it to her, and she told me 10 stars !!!!!! But we at zaar only have 5 max. so that's what she is giving it. I myself will taste some tomorrow when I go to visit :)

The little cutie here is Martha, the sweet lady I was blessed to have worked with for two years. Martha passed away on 12/3/08. Martha and I would ride endlessly during the holidays, and she would sing carols and laugh and just enjoy it so much. I know this holiday season, she will be with her brother, son and mother and finally be "home". Martha, I still love you more. ******* I'm a simple girl, born of good stock. I'm the mamma of two spoiled tuxedo cats: Beauregard and Patches (the one who's been drinking eggnog). They love cuddling together, and this picture is taken on my hall steps. I'm a firm believer in LOA. I need to get more dedicated to daily practice. Below is a film that explains it, and is wonderful.
