  1. Preheat oven to 350.
  2. Combine brown sugar, oil and beaten egg.
  3. In a small bowl, mix the milk, baking soda, salt and vanilla.
  4. Add milk mixture to sugar.
  5. Mix alternately with flour, beating well after each addition.
  6. Fold in rhubarb and nuts.
  7. Distribute batter into 2 greased and floured 8x4x3 inch loaf pans.
  8. Sprinkle with topping.
  9. Bake for approximately 1 hour.
