ingredients
- 1 1⁄2 cups flour
- 3⁄4 cup brown sugar
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄3 cup vegetable oil
- 1 egg
- 1⁄2 cup buttermilk
- 1 teaspoon vanilla
- 1 cup diced rhubarb (fresh)
- 1⁄2 cup chopped walnuts

Topping
- 1⁄4 cup packed brown sugar
- 1⁄4 cup chopped walnuts
- 1⁄2 teaspoon cinnamon
directions
- Combine all ingredients except the topping and mix well.
- Fill greased muffin cups 3/4 full.
- Then sprinkle topping over the top and bake at 375 degrees for 20 to 25 minute.
