Rhubarb Pizza

"I have had this recipe since I was in high school in the 70's. My art teacher gave it to me and I've been making it every spring since. My kids love it. Didn't find anything quite like it on Zaar yet, so I decided to submit it. It's an easy and fun dessert, because it looks like a cheese pizza, but tastes like a strawberry-rhubarb treat!"

  • Mix first 5 ingredients. Mixture will be crumbly.
  • Beat egg with the 2 tablespoons milk.; add to crumbs. Pat mixture on the bottom of a round pizza pan.
  • Place chopped rhubarb on top of crust. Sprinkle dry Jello all over rhubarb.
  • Mix the sugar, flour and melted butter until it forms into crumbs. Sprinkle all over rhubarb and jello mix.
  • Bake at 350 degrees for 40 minutes.

  1. This was very flavorful. The crust was very sticky and hard to spread. I am going to try again using some refrigerated sugar cookie dough for the crust.
