Rice A Roni Salad

"This is a great dish to serve when it's too hot to cook and you want a main dish salad for dinner. You can add shrimp or chopped crab or lobster instead of the chicken. I sometimes add a green or red pepper to the mix."

  1. I love this recipe - sometimes I exchange the chicken for shrimp.

  2. I too added the bell peppers, 1/2 tsp curry and used 1/2 cup mayo. I also added some sliced black olives and served it on a bed of raw chopped spinach and romaine. It is ....stupid good.

  5. Yooper, this is a family favorite! I made this recently, and increased the mayonnaise to about 2/3 cup, added about 1/2 tsp. horseradish, and 1 tsp. vinegar. We think it's even better!

What can I say about myself that hasn't already been mentioned in the police reports? Just kidding! I'm a single guy who loves to cook! Good thing, or I'd starve or go broke eating out! I love to read, horror and mysteries are my favorite. Love music, (except rap) and I'm a huge Green Bay Packer Fan!
