Rice and Vermicelli (Rice-A-Roni)

- 3⁄8 cup rice
- 3⁄8 cup vermicelli
- 2 tablespoons butter
- 2 cups water
- 2 tablespoons chicken gravy mix
- 1 tablespoon onion
- 1 teaspoon dried parsley
directions
- I make the noodle / rice blend up in a big batch ahead of time, and then measure out 3/4 cup when I want to use it. Simply mix equal amounts of noodles and rice. To make a single serving, I pour rice halfway to the 3/4 mark in my pyrex measuring cup, and then fill it the rest of the way with the pasta. Very easy.
- Heat the butter in a skillet. Add 3/4 cup of the rice/noodle mix, and brown, stirring frequently for a minute or two.
- Add the water, gravy mix, onion, and parsley. Heat to boiling, reduce heat, cover and simmer 15 minutes.

I am so glad I found this recipe! I'm going to be using it a lot! It is a quick and tasty side dish. I make 1/2 a recipe for the 2 of us. I don't buy chicken gravy mix, so I use beef, chicken, or vegetable broth instead of water. The better the broth, the better the rice-a-roni! (I usually use jasmine rice and orzo pasta. Simmer time is 20-25 minutes, sometimes adding extra liquid.)
