Rice Crispies' Tuna Cheese Deluxe

"1970s recipe taken from a box of Rice Crispies cereal. I was a fairly new cook back then and I always made some kind of casserole when my in-laws came to visit. They said they especially liked this crunchy tuna recipe!!"

  • Melt 1 tablespoon of margarine. Pour over cereal and almonds, coating well. Set aside for topping.
  • In large saucepan, melt the remaining 1 tablespoon of margarine. Add onion. Cook just until tender, stirring occasionally. Add soup, milk and cheese. Cook over medium heat until cheese is melted, stirring occasionally, Remove from heat. Lightly stir in rice, tuna and olives.
  • Spread tuna mixture evenly in greased 10x6-l/2x2" (1-1/2 quart) baking dish. Spoon cereal topping evenly over casserole. Sprinkle paprika over topping.
  • Bake in 325 degree oven about 20 minutes, or until thoroughly heated.

My kids would laugh if they saw the title I chose - Chef Hall. When my son was in elementary school, he told me cafeteria food was better than my cooking. Of course, he took peanut butter and jelly sandwiches to school every day to eat IN THE CAFETERIA! Cooking is not my favorite thing to do but I do love to READ recipes. My children are adults and have done well in their choice of vocations. My daughter is a CPA (Senior Accountant for Chickasaw Nation Industries), and my son and his wife are both lawyers. Needless to say, if I should get into trouble (and there is always that possibility!!), I will be well taken care of.
