Rice Krispy Treats for One (Or Maybe Two!)

"I have been making rice krispy treats for my kids at school since there are children in their classes with peanut allergies. Each time, there have only been enough for the class - no leftovers! My husband always wants "just one" - but I don't want to make an entire batch for just him. Then it dawned on me ... I could just cut down the recipe! It worked out great! Super easy. Super yummy. Sometimes I add a little food coloring to the melted marshmallows depending on the occasion. Enjoy!"

  • Melt the butter in a small saucepan on medium-low heat.
  • When melted, add the marshmallows and stir constantly until smooth and melted.
  • Add food coloring (optional).
  • Add the crispy rice cereal.
  • Spoon onto a plate or mold sprayed with non-stick spray.
  • Shape treat and let cool. I put a sandwich baggie over my hand and spray it with non-stick spray to pat and shape the treats. No sticking!
