Directions

  1. Soak or prepare the rice noodles according to the package directions.
  2. Drain and set aside.
  3. Heat the oil in a skillet over medium-high heat, and cook the ginger and garlic, stirring, for 1 to 2 minutes.
  4. Add the scallions, chili, carrots and snow peas.
  5. Cook, stirring, for 2 minutes.
  6. Stir in the salt.
  7. Add the noodles and toss to coat.
  8. Remove from the heat.
  9. Stir in the sesame and chili oil.
  10. Garnish with cilantro or parsley.
  11. Serve at once.
  12. Enjoy!
