Rice Noodles With Tahini Sauce and Mixed Veggies

"My sis and me came up with this tasty asian inspired recipe ourselves one day when wanting to use up some rice noodles. Its a rather quick to make and easy dish, which we think tastes fabulous. Plus the tahini sauce and the veggies make it super healthy."

ingredients

  • 250 g rice noodles (I used Thai style-those are thin and made only from rice flour and water)
  • 2 big onions
  • 6 carrots
  • 60 g frozen peas (more or less as you please)
  • 2 tablespoons sesame seeds
  • 2 tablespoons tahini
  • 1 tablespoon butter
  • 1 tablespoon sesame oil
  • gomashio, for sprinkling (optional)

  • Wash, peel and cut carrots into small strips. Peel onion and slice.
  • Heat butter and sesame oil in a big pan. Add onions, sesame seeds and carrots and sautee for some minutes. Add peas and some water (2-3 tbs) and simmer covered for about 10 minutes until veggies are tender but not mushy.
  • Season with tahini and salt to taste.
  • 3 minutes before veggeis are ready, place rice noodles in a dish and pour over boiling water. Allow to brew until noodles are ready (mine take 3 minutes, if yours take longer you will have to start making them earlier). Drain noodles and toss with veggies and sauce.
  • Serve sprinkled with gomashio if you like or some asian herbs.

  1. I'm also a big fan of this style of dish, especially for a quick weeknight meal. They're easy to play around with based on what you have on hand. It was nice to use tahini for a change from peanut butter. I felt the amount of tahini was perfect - I skimped on the sesame oil and wish I hadn't now. The only thing missing for me was more saltiness, soy flavour, so I added Braggs. I also stirred up the tahini with the water, more water than called for. I think another great addition (not with Braggs tho), might be lemon juice and garlic. Thanks Loula!
     
  2. These kinds of dishes are among my favorite: Asian-style noodles! As written, for flavor, I would rate this a 3-star recipe; with the addition of Sriracha hot chili sauce and a little chili sambal tossed in, it's a definite 4-star recipe that I love and will make often for lunch. Some chopped cilantro would be very nice in this. Thanks, Lalaloula! Made for TYM tag game.
     
  3. This one has potential but I think the proportions are a bit off. For 250G of noodles I had to really pour on the tahini to be able to detect its flavor. I think it might be nice with cilantro too.
