- 2 eggs
- 2 cups brown rice, cooked
- 2 1⁄2 cups cheddar cheese, grated
- 1 (15 ounce) jar salsa
directions
- Cook rice.
- Mix rice with eggs, and 1 1/2 c cheese.
- Grease cookie sheet.
- Flatten into a "crust" on a cookie sheet.
- Completely cover crust with salsa.
- Top the salsa with remaining cheese.
- Optional: add olives,chicken or ground beef.
- Bake in 450F oven for 20 minutes.
