Rice Pudding (A La Nestle Carnation)

- 2 cups water
- 1 cup white rice, medium or 1 cup short grain
- 1 cinnamon stick, broken into pieces
- 1 (12 fluid ounce) can nestle Carnation Evaporated Milk
- 1 (14 ounce) can Nestle sweetened condensed milk
- 1⁄2 cup raisins
- 1 1⁄2 teaspoons vanilla extract
- 1⁄4 teaspoon salt
- 2 large eggs, slightly beaten
- 1 pinch ground cinnamon
directions
- Place water, rice and cinnamon stick pieces in small saucepan; bring to a boil. Reduce heat to low; cover. Cook for 12 to 15 minutes or until liquid is absorbed. Remove cinnamon stick pieces. Stir in evaporated and sweetened condensed milks, raisins, vanilla extract and salt; bring to a boil. Stir a small portion of rice mixture into eggs. Add egg mixture to rice mixture; mix well with wire whisk. Bring to a boil. Cook, stirring constantly, for 2 minutes. Serve warm or chilled. Sprinkle with cinnamon before serving.

I happened to have all the ingredients in my pantry, so I thought why not give this recipe a go. OMG it was absolutely divine, and so easy to make. My husband is very picky about his rice puddings, but he ate this one up . <br/><br/>This one is a keeper for sure, and I will make it again. Thank You so much for posting this one!

Made this recipe as given, with one exception ~ Since I didn't think the cinnamon stick that I used had much flavor (the odor seemed too faint for me!), to it I added a generous pinch of the ground Saigon cinnamon that has a lot of flavor, & this rice pudding turned out very, very satisfying! Thanks for posting the recipe! [Made & reviewed for one of my adopted chefs in this Spring's Pick A Chef event]
