Rice Vinegar Cucumber Salad

"The rice vinegar gives this salad a great flavor. It's milder and more flavorful than regular vinegar, and delicious. I found this recipe a few years ago and it has become my standard cucumber salad recipe. I always have to double this recipe because it disappears in my house. Even the kids love it!"

  • Mix sugar, vinegar, oil, salt and pepper and dill in a serving bowl.
  • Peel cucumbers, if desired, then thinly slice and add to bowl, stirring to mix and coat.
  • Let marinade.

  2. It was ok...too much oil and dill weed. Could maybe use a little more sugar too. Not sure if I'll make it again.
     
  3. This is really delicious and refreshing! I am getting reacquainted with rice vinegar and this simple salad hit the spot. This vinegar is mild and lets the fresh cucumber flavor shine through. I did reduce the amount of dill as a personal taste. Great summer recipe! Thanks Carol16!
     
  4. Generally this was good, but a full teaspoon of dill was major overload in my opinion. Next time I will cut back.
     
  5. This is one of my favorite ways to eat cucumbers. I use seasoned rice vinegar and no sugar. I've been using this recipe for many years. YUM!

Tweaks

  1. This was really good, though I did change up a few things. I used extra virgin olive oil in place of the vegetable oil, added a splash of sesame seed oil and threw in a sliced tomato. DH loved it and it went right along with my diet. Thanks for posting!
