Rich Bread Machine Dinner Rolls

"Adapted from a 1964 Betty Crocker Cookbook (my Grandmother's). This is one of our favorites, and making rolls in the bread machine is a snap! These can be shaped almost any way you like. Great dough for making sweet rolls, also!"

ingredients

  • 1 cup lukewarm milk (put in microwave for about 30 seconds)
  • 1 egg
  • 14 cup shortening
  • 3 12 cups flour (bread flour is best)
  • 14 cup sugar
  • 1 teaspoon salt
  • 2 14 teaspoons yeast

directions

  • Add all ingredients in order specified by your bread machine manufacturer.
  • Press dough cycle and let run until finished.
  • If you don't have a dough cycle, let the machine run through the first kneading and first rise and then remove.
  • Take dough out of bread machine and put on lightly floured surface.
  • Roll into thick log with hands and cut into 12 equal pieces.
  • Shape as desired and put onto a greased cookie sheet or jelly roll pan.
  • Cover with a clean towel and let rise in a warm area for 30 to 45 minutes or until doubled in size.
  • (Hint: Turn oven on at 150 degrees for one minute, turn off and let rolls rise in warm oven) When ready, preheat oven to 400 degrees.
  • Bake rolls at 400 degrees for 12 to 15 minutes or until golden brown.

  1. Very good rolls, the first rolls I have made that look and taste like... good dinner rolls! Loved using the ABM for the mixing, kneading and first rise. I baked 6 and froze 6 on a tray. After the 6 were frozen, I transferred them to a bag. To bake the frozen ones, I will place as many as I want to bake on a sheet and thaw/rise for 4 hours in the oven.
     
  2. I have been making these rolls for years and I am finally getting around to rating this! These Rolls are easy to make and taste great. They are also the only rolls that my family will let me make. I have tried others but they dont care for them. The only change I made is that I use margarine instead of shortening and I also brush the rolls with butter when they come out of the oven.
     
  3. The first time I made these I made them with Whole Wheat flour and they didn't really turn out well so I wouldn't recommend that. The second time I did it I followed the recipe exactly and they were perfect!! The family has requested them again for Christmas.
     
  4. I have to say this is a FANTASTIC recipe, these buns taste just like the ones I grew up eating, it was surprising to me that i could create the same flavour in a bread machine. I have made the recipe several times with many variations-clover leaf rolls, cinnamon rolls and large dinner buns.They are light ,fluffy and sweet. Thank you for this recipe it has become a favorite of my family!!
     
  5. This is a good, versatile dough recipe. I actually got 24, rather large rolls from one batch of dough so I think if I'd made 12 from the batch, they'd be huge rolls and good for hamburgers. So easy to do in the bread machine and then form the rolls the way you want. Thanks Branwyn, good recipe.

  1. These are the best rolls ever I replace the shortening with butter or margarine and I added 2 teaspoons of the vital wheat gluten and 2 teaspoons of powdered dry milk they came out really soft and were delicious
