Rich, Rich, Rich - Vanilla and Fig Squares

  • Preheat the oven to 375 degrees.
  • In a large bowl cream the butter and sugar until light and fluffy.
  • Add egg yolks, one at a time, beating well.
  • Next add the vanilla and orange rind.
  • Now slowly beat in the flour, until well blended.
  • Spread the crust batter evenly into an ungreased 13 x 9 " pan.
  • Bake in a 375 degree oven for 15 minutes, remove and set aside to cool until needed.
  • Reduce heat in oven to 300 degrees.
  • In a medium size pot, add the figs, raisins, 1/2 cup coconut, orange rind, sugar, vanilla extract, boiling water and butter.
  • Boil over medium heat for about 30 minutes until the filling is thick and resembles jam.
  • Spread the filling over the crust and bake in a 300 degree oven for 10 minutes.
  • Remove squares from oven and place on rack, sprinkle with the remaining coconut, cool, then cut and enjoy!

  1. I loved this recipe, DH said 'so-so', the crust was very goopy. No flour is listed in the ingredients but it is in the directions. I added some but I guess not enough. Please say how much. I used the vanilla suagr. Thanks.
     
  2. Well, I didn't plan early enough to have some vanilla sugar made up for this recipe, but now have it in the works for another time! Meanwhile (back at the ranch) I made these this time with just the regular stuff & still, what with the orange zest & figs & raisins, & all the rest . . . Well, just let me say ~ ~ THESE ARE ABSOLUTELY GREAT! Because they're so rich, I cut them into much smaller pieces (48 in all) to have for a monthly group I'm hosting tomorrow evening!
