Rich Sour Cream Fudge

- 2 cups white sugar
- 1⁄2 teaspoon salt
- 1 cup sour cream
- 2 tablespoons butter
- 1⁄2 cup pecans, chopped (Or any nuts you'd like, walnuts are great too. She says her grandmother used to also add dried cherr)
directions
- Butter a 2 quart saucepan, mix sugar, salt, sour cream in saucepan. Cook over medium heat to softball stage, stirring constantly.
- Remove from heat and transfer to a large bowl set over simmering water (a double boiler), add butter and beat with a hand mixer on medium speed until fudge starts to lose it's glossy texture. Stir in nuts and pour immediately into a buttered 9x9 pan as it will begin to set quickly.
- Allow to cool, then cut into 1" to 1.5" squares and enjoy!
