  1. Preheat oven to 350°.
  2. Cream together sugar and butter.
  3. Add vanilla.
  4. Beat eggs in one at a time.
  5. Sift flour, salt and baking soda.
  6. Add to creamed mixture.
  7. Mix well.
  8. Add the ricotta cheese.
  9. **Usually here I add butterscotch chips or chips of your liking (raspberry chips are my favorite).
  10. Drop by teaspoonfuls onto a non-stick cookie sheet.
  11. Bake for 15 minutes or until lightly browned.
  12. Frost if desired.
