Ricotta Pancakes

  • Mix all of the dry ingredients (flour, baking powder, baking soda, salt and sugar) together in a medium bowl.
  • Add the ricotta and milk and stir until mixed. It will be lumpy.
  • Let the batter rest about 10 minutes at room temperature.
  • Cook on a griddle or large pan over medium-high heat until golden brown on the bottom.
  • Flip pancake over and continue to cook until golden brown on bottom side and cooked through.
  • Serve with maple syrup, powdered sugar, or any other sweet topping (such as fruit).
