  • Mix ricotta, honey and cinnamon.
  • Spoon mixture into a piping bag with a star tip. I use a #18, but any size will work as long as it is large enough for the ricotta mixture to be piped through it.
  • Take each apricot and roll it in your fingers to reveal the hole made when the pits were removed. Pipe the ricotta mixture into this hole, filling the apricot.

  1. I used canned/halved apricots in place of the dried version and this was a FABULOUS, healthy, simple (took me literally 2 minutes start to finish) dessert. I highly recommend this IF you like ricotta :)
     
  2. These were SO good and so very simple to make. My 7 year old wanted to help, so I had her pipe the mixture into some of the apricots for me. My 12 and 11 yr olds, who normally shy away from any kind of "healthy looking food", were devouring them as quickly as we could put them onto plates. Thank you for sharing this recipe - will definately use again!

I grew up watching my mom cook. Now, my mom is one of those people who can't actually follow a recipe - she always ALWAYS modifies things to her own tastes, and usually makes them better. Both my brother and I have developed a love of food through my mom. While I am just a chef-for-fun, my brother is actually studying to get his culinary arts degree!
