Ridiculously Fantastic Ribs

- 2 cups ketchup
- 1⁄2 cup cider vinegar
- 1⁄2 cup water
- 1⁄4 cup fresh lemon juice
- 2 tablespoons Worcestershire sauce
- 2 tablespoons Tabasco sauce
- 2 tablespoons Dijon mustard
- 2 tablespoons molasses
- 1⁄4 cup packed dark brown sugar
- 2 tablespoons chili powder
- 2 teaspoons smoked paprika
- 2 teaspoons minced garlic
- salt and pepper, to taste
- 4 racks baby back ribs (about 2 lbs each)
- salt & freshly ground black pepper, to taste

- Preheat the oven to 350 degrees F. Meanwhile, prepare the sauce: Combine all of the ingredients in a heavy pot over med-low heat. Cook, stirring to heat through, about 5 minutes. (Do not boil.) Strain to remove the garlic. Cool to room temperature. Use the sauce immediately or refrigerate, covered, for up to 2 weeks. (Makes 3 cups.).
- Place the ribs, meaty side up, in baking pans to fit. Season well with salt and pepper, then cover with 2 cups of sauce. Bake for 1 hour, basting with the remaining sauce after a half hour. Cut the ribs apart and serve.
