- 1 tablespoon olive oil
- 4 -6 garlic cloves, minced
- 1 1⁄2 teaspoons salt
- 1 teaspoon dried oregano
- 2 teaspoons dried marjoram
- 2 teaspoons dried basil
- pepper, to taste
- 2 lbs boneless pork roast
directions
- Preheat oven to 350 degrees. Make a paste with olive oil, garlic, salt and seasonings. Trim visible fat from the exterior of the roast. Place in shallow roasting pan on a rack. Rub seasoned garlic paste over the pork. Bake for 45 minute and check temp with meat thermometer. Continue roasting until the internal temp is 155-160 degrees. Remove from oven and allow to rest about 10 min before slicing.

We loved the combination of herbs and garlic use on this roast. Being a garlic lover, I had to use 6 LARGE cloves of garlic when I made this. I don't know how long this was in the oven, since I used a digital thermometer which was set for 155 degrees. The wonderful aroma coming from the oven will tempted you to dig into this roast before it was fully done. Have patiences, your going to love this roast. Give this recipe a try, you'll not be sorry. I am Italian and cook Italian a lot -- but my roast pork has always been lacking (or overcooked). I always follow recipes exactly as printed the first time, but was leery about this one -- I don't like using dried herbs. But I followed this exactly and it was WONDERFUL. My husband was raving and finished the whole thing. Though I hoped for leftovers for nice pork sandwiches, I am glad this was so good as is to be finished and enjoyed so much. Delicious! (And my first time on this site, what a find!)
