Roast Sirloin Beef with Rub

"This rub adds a wonderful flavor to the roast and the gravy is to die for. My kids aren't huge fans of roasts but they did like this one. I cooked a 5 lb roast and cut back on the garlic a bit, but left the amounts for the other ingredients the same. I cooked the roast at 500 degrees for 20 min and the remainder at 350 degrees for approx. 30 min. Serving size is dependant on how big of eaters you have...children vs adults"

  • Score fat on top of roast.
  • Combine flour oil, mustards, garlic, black pepper and salt.
  • Rub over roast and marinate 1-4 hours Preheat oven to 500 degrees F (260 degrees C) Place roast on a rack in roasting pan Roast for 30 minutes Reduce heat to 350 degrees and roast another 45 min or until instant- read thermometer reads 120 F for rare or 140 F for medium rare.
  • Let rest for 15 minutes while making the gravy Gravy. Drain fat from pan, leaving 1 tbsp.
  • Stir flour into the pan and cook until lightly browned, about 1 minute. Add drippings, beef stock and tomato paste and bring to boil. Simmer for 5 minutes or until slightly thickened.
  • (If you like your gravy a little thicker mix 1 tbsp cornstarch with cold water to form running paste and stir into gravy until thickens) Season to taste.

  1. Adjusted the recipe for a 3lb sirloin tip roast. Followed exactly except I followed others roasting at 450 for 20 min and then 300 for about an hour. Turned out the BEST. Didnt have time to do the gravy but most certainly will next time. Thanks for the recipe!
     
  2. Did not use sirloin but eye of round. Rub was excellent and cooking times vary with size of roast. Used probe thermaometer
     
  3. I have had problems in the past with my roasts drying out and being kind of bland, but this was delicious! The crust was just crispy enough and kept all the juices in. I didn't have dry mustard or dijon, so I just used regular yellow mustard, which worked fine! The gravy was okay, I didn't think the roast really needed it.

I live in Ontario and work full time as a consultant in IT for a communication company in another province. I create test cases and scripts and initiate the testing for the software changes that the programmers make to the company’s various programs. I have the pleasure of working from my home and dialling into their network. I also sell Avon for fun. I met my husband (Paul) on a blind date. We dated 3 years and have been married for 25 years. We have two children a son(age 20) and a DD(age 17). We have been blessed with the best two kids anyone could ask for. DH is a commerical airline pilot and currently is a "Check Pilot" on the A320. He is away quite a bit, so when he comes home I try to make sure he has a decent meal. He eats out when on the road so he really enjoys a good home cooked meal when he arrives home, while the rest of us want to go and eat out. I love to spend time in my garden, travel and try new recipes. DH and I love to travel or just spend time at a cottage in the summer. I have not been on a cruise but hope to within the next 2 years (maybe for our 25th wedding anniversary.) We pretty much eat anything. DH especially loves seafood (more than I do.) while I prefer to eat chicken. We are so predicable when ordering our meal at a restaurant. Next, I think it would have to be Italian and then something spicy like Thai or Indian. My family loves Indian food but I have never had the courage to make it. Maybe I will someday. I like to read true stories and criminal books. David Baldacci is one of my favourite authors. My favorite restaurant is "Bin 23", "Einsteins Cafe," "Abberfolye Mill" My brother sent me the link to Recipezaar and now I am hooked trying new recipes every day.
