  • Put the oven on broil.
  • Clean and slice the bell pepper into four quarters. Remove the seeds and white part.
  • Brush with olive oil.
  • Top each slice with 1/2 ounce of mozzarella cheese.
  • Cook for 10-15 minutes or until cheese is browned and bubbly.

  1. Wow. I'm so impressed with recipe because it is simple, has very few ingredients AND I would proudly serve this to guests. I scaled it down to one red pepper and ended up eating the whole thing! If serving for appetizers, I think you could even cut each pepper into 8 pieces. I'm actually going to put this into my Best of the Best file. Gratzie! Made during ZWT7 for the Golden Gourmets.
     
  2. This is exactly what I was looking for. Quick, easy, and you can really put whatever you want on top. I used Colby jack cheese and some Parmesan, then dipped them into a little ranch dressing. Perfect snack or quick lunch.
     
  3. I loved these as an appetizer the other evening, ooey gooey goodness with flavor.
     
  4. I used red and orange bell peppers and cheddar cheese. I let them to broil 15 minutes. They were so yummy. I prefered the red peppers. Thanks strawberrybird :) Made for Best of 2011 tag game
     
  5. Three ingredients for all of this? Wow! And I even used olive oil cooking spray & reduced fat cheeses. Definitely a make again recipe as the summer peppers roll in! Thank you for sharing the recipe. Made for ZWT7.
