- 6 cups cauliflower florets
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
- 2 teaspoons butter
directions
- Preheat oven to 400.
- Arrange cauliflower in a single layer on a baking sheet coated with cooking spray. Coat cauliflower with cooking spray; sprinkle with salt and pepper.
- Bake at 400 for 25 minutes, turning cauliflower twice.
- Melt butter in a small skillet over medium heat; cook 3 minutes or until lightly browned.
- Combine cauliflower and browned butter in a bowl and toss gently to coat.

Made this tonight along with 1/2 a roasted turkey breast, sweet potatoes and a tossed green salad.<br/>The cauliflower was excellent - I sprayed a foil lined cookie sheet with butter flavored Pam, then sprayed the florets with the same butter flavored spray, lightly sprinkled with salt, pepper and a bit of ground garlic (or garlic powder not garlic salt) - roasted for 10 min at 400F, then turned them over and roasted another 10 min - they were absolutely perfect! Lightly browned, and very tasty! Depending on what (protein) I am serving them with, I will probably change the spices/seasonings to suit the entree. Will definitely make this often (soooo much better than boring steamed cauliflower, and way less calories than cheese sauce/au gratin!). Thanks for sharing your recipe. :-)

Very tasty, easy, inexpensive, and healthy! I like the idea of using cooking spray to get the salt and pepper to adhere to the cauliflower-creative.
