  • In a small bowl, cream the butter, and sugar.
  • Beat in the egg, honey, and salt.
  • Combine flour, cornmeal, and baking powder, and add to the creamed mixture alternately with the milk.
  • Fold in the frozen corn.
  • Fill greased or paper lined muffin cups 2/3's full.
  • Bake at 400 degrees for 20-25 minutes or until a toothpick comes out clean.
  • Cool 5 minutes before`removing from pan to a wire rack.
  • Serve warm.

  1. These are good and not overly sweet. I liked that it didn't make a big batch since DH doesn't really like corn bread (though he ate them). Made for Spring PAC 2014.
     
  2. Served these delicious corn muffins with our New Year's meal. We loved the crunchy corn in the midst of the muffin. I reduced the sugar a tad bit - just our preference. This made a really nice addition to our family feast. Made for PRMR, January, 2014.
