- 680.38 g fingerling potatoes, Sliced lengthwise in 1/2
- 85.04 g bacon, diced
- 85.04 g onions, sliced
- 1-2 garlic clove, minced
- 3 fresh sage leaves, minced
- 2.46-4.92 ml coarse salt (Recipe #191455) or 2.46-4.92 ml seasoning salt (Crazy Salt)
directions
- Preheat oven to 425°F.
- Place all ingredients in a roasting pan.
- Place in oven for 15 minutes.
- Toss all ingredients and roast for 15 more minutes. Roast till fork tender and crisp!

Oh. My. Goodness! These potatoes are absolutely fabulous. They are a perfect union of tender, crispy fingerlings with crumbled bacon, caramelized onions, garlic bits and just the right amount of sea salt. Every single element of this dish is wonderful. I would not change a thing. Thanks for sharing this heavenly recipe. It's a keeper!

Easy and delicious. Great with a roast. The vendor I get fingerlings from at the farmer's market, was out today, so I just used baby reds, cut in half. Worked great. Loved the fresh sage, and may up the amount next time. This would be a great brunch dish, with the bacon and onions. Made for Fall 2009 PAC.

Great taste and easy to make, but when it was cooking it was dry and stuck to the bottom of the pan. Maybe my bacon wasn't just "fat enough" but there was very little grease to make the potaoes moist and yummy looking like on the photo. I had to add 2 TBsp of olive oil and it made a great difference. Will make it again.
