Roasted Garlic Smashed Potatoes

  • Cut off pointed end of garlic bulb.
  • Place garlic bulb on a piece of aluminum foil; drizzle with oil.
  • Fold foil to seal.
  • Bake at 350 degrees for 1 hour; cool.
  • Squeeze pulp from garlic, set aside.
  • Cook potatoes in a dutch oven, in boiling salted water to cover 20 to 25 min or until tender.
  • Drain and place in a large bowl.
  • Mash potatoes with roasted garlic pulp, cream cheese, and next 5 ingredients in a bowl until smooth.
  • Garnish, if desired.

  1. Creamy goodness. I did not add the total amount called for in the cream cheese and sour cream and omitted most of the butter but they were still insanely creamy. Great recipe Made for Alphabet Soup Tag Jan 2009

I live about an hour west from St. Louis out in the country. I love it here it's so peaceful and serene. I tend to spend most of my free time reading, watching movies or tv. I like to watch Food Network shows too, mostly Pioneer Woman, Trisha Yearwood, Ina Garten, and many others. I love cooking for family and friends. I'm always asked to bring a dish to a potluck or dinner. My specialty is baking and making desserts. Recently, I've been looking for recipes for homemade remedies and soaps, and also homemade gifts in a jar to give as presents. I've never tried doing anything like that and I think it would be fun and interesting to do.?
