  • 10 small red potatoes, halved
  • 14 cup vegetable oil
  • 12 teaspoon ground black pepper
  • 1 12 teaspoons herbes de provence

Directions

  1. Preheat oven to 375º.
  2. Place potatoes in a roasting pan. Pour oil over potatoes and sprinkle with pepper and herbs de Provence.
  3. Stir potatoes to coat all sides. Bake, uncovered, for about 1 hour or until potatoes are fork tender. Stir occasionally while roasting.
