“I found this very pleasing! I enjoy spinach as most of you know and roasted red peppers are high on my list as well. Found this recipe while leafin through an old Southern Living Magazine, Spetember 2007 edition! I found it in a Dr's office and I told them I would help them clean out their old magazines by taking that one home with me. The following week - I showed up with some magazines of my own as a donation. There is a cooling time of 30 mins or even longer. Lemon juice is an easy way to add fresh zip to this tasty dip -- just in time for Super Bowl Sunday.”

  1. Stir together first 7 ingredients in a large bowl.
  2. Drain thawed spinach well, pressing between paper towels; stir into red bell pepper mixture.
  3. Cover and chill 30 minutes or up to 2 days.
  4. Serve with assorted corn or tortilla chips.or flavored pita chips.
