Roasted Salmon With Root Vegetables

  • preheat oven to 425 degrees.
  • Coat 2 foil-lined baking sheets with non stick cooking spray.
  • Arrange carrots, parsnips, and brussel sprouts evenly on first baking sheet.
  • Drizzle with 2 Tbs olive oil and sprinkle with 1 Tbs of Italian seasoning and 1 tsp each of salt and pepper.
  • Arrange beets on half of the second baking sheet and roll up in foil making a pouch.
  • Place salmon filets on remaining half of sheet; lightly coated with the remaining 3Tbs olive oil.
  • Sprinkle with remaining salt and pepper and drizzle with lemon juice.
  • Bake the sheet with carrots and veggies 35-45 minutes or until tender, stirring occasionally.
  • Bake the salmon sheet pan for 15 minutes or until the fish flakes with a fork.
  • Transfer vegetables to a platter and top with the salmon.

  1. The veggies are great with the salmon. It was my first time trying parsnips and it's very good. But I should have started cooking the beets way earlier than the other veggies. Because the beets were not ready when the other veggies were cooked and the salmon was cooked. It took way more time to have the beets ready.   2. This delicious meal is filled with nutrients. I loved the roasted veggies. I hadn't tried brussel sprouts since I was young (and didn't have a fond memory of them) and found that I LOVED them roasted. I roasted the mixed veggies for 30 minutes and they were very well done, so I'd suggest checking on them sooner. I also suggest cooking the beets longer than the 15 minutes suggested - maybe putting them in at the same time as the other veggies. The recipe didn't state what to do with the remaining Italian seasoning, but I assumed it was to be sprinkled on the salmon. It was delicious. I don't think the salmon needed the full 1 t. of salt though. The salmon was flaky and tender, perfectly done! Thank you. :)

I am also&nbsp;married to my best friend, Jeff and have been since April 2005.&nbsp; I love cooking, hate cleaning and will do whatever I can to get out of it!&nbsp;&nbsp;I&nbsp;love grilling and baking.&nbsp;&nbsp;I do most of the grilling at my house, and bake for almost a week straight at Christmas time!&nbsp; I can make or will attempt just about anything,&nbsp;though I rarely make&nbsp;brownies, my husband's are the best!&nbsp; Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p> <p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites.&nbsp; I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day!&nbsp; Over the past couple years with zaar, I have found tons of new recipes&nbsp;my family&nbsp;normally wouldn&rsquo;t eat&nbsp;but have been happily surprised with new favorites.</strong></span></p> <p><span><strong>I&nbsp;love to join in&nbsp;all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p> <p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes.&nbsp; Most of all though&nbsp;are my kids; being home all day with them is fun and challenging, but I wouldn&rsquo;t trade it for any salary!!</strong></span></p>
