  • Preheat oven to 500°.
  • Parboil the sausages in water to cover for 8 minutes, to rid them of excess fat.
  • Melt the butter in a large roasting pan; add the grapes; toss to coat.
  • With tongs, transfer the parboiled sausages to the roasting pan and push them down into the grapes so the sausages will not brown too quickly.
  • Roast in the oven, turning sausages once, until the grapes are soft and the sausages have browned, 20-25 minutes.
  • With a slotted spoon, transfer the sausages and grapes to a heated serving platter.
  • Place the roasting pan on top of the stove over med-high heat and add the balsamic vinegar; scrape up any browned bits on the bottom of the roasting pan, and let the vinegar and juices reduce until they are thick and syrupy.
  • Pour the sauce over the sausages and grapes; serve immediately.

  1. I was intrigued by this recipe, and I'm so glad I decided to give it a try. It's really delicious! I cut this down for two people with just 2 sausages, and we both really loved it. The original recipe from The Food Network calls for 2-4 Tablespoons of dry red wine (Chianti) to be added to the grapes in Step 3, and cooked down a bit. So my version included this. I will definitely make this again, and I look forward to serving this to guests!
     
  2. Oh, yum! We were a little skeptical, but have a pile of grapes we must use up soon, so we decided to give this a go. We used homemade Italian sausage, and also cut it down to 2 servings. I didn't want to parboil the sausages, as we make pretty lean ones, and I also smothered them in grapes, so they didn't brown as much as I would have liked (my own fault, next time I'll sear them in a bit of fat in the pan first). The grapes really cooked down, so I'm glad I used a lot of them; roasted grapes are incredible. This recipe lends itself well to additions, like rosemary or sage, garlic, chopped red onion, etc. I'll be making this again for sure. We had sauteed garlicky spinach, fresh tomatoes, and some rustic bread with it, it was a very satisfying and nutritious meal. I'll be making this again for sure.
     
  3. This is an awesome recipe... I have been makin a variation of this recipe for years... my kids loved it... we would usually serve it with mashed potatoes.. the sauce is delicious over the potatoes. I usually made it with 1/2 cup of balsamic vinegar and put the vinegar in with the sausage and grapes in the oven... I would transfer the grapes and vinegar to a saucepan and wisk softened butter in to make the sauce... Really, if you come across this recipe, try it out... it sounds a little different, but, it is truly delicious!!!!
