Roasted Sweet Potatoes

- 4 cups sweet potatoes, coarsely chopped
- 1 vidalia onion, m sliced in wedges
- 2 garlic cloves, sliced
- 3 tablespoons olive oil
- 1 tablespoon fresh thyme, chopped
- 1⁄2 cup pecan halves
- 1 tablespoon balsamic vinegar
- salt and pepper
directions
- In a large bowl, combine potatoes, onion, garlic, oil and thyme; toss well to coat. Pour vegetables in to a shallow roasting pan or jelly roll pan.
- Bake in a 425F oven, turning frequently, for 40-45 minutes or until vegetables are soft and golden brown.
- Add pecans during the last 10 minutes of baking. Drizzle with vinegar. Season with salt and pepper.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
