  • Preheat oven to 425.
  • Toss sweet potatoes with oil, cayenne, and salt in a large bowl until coated.
  • Transfer to a baking sheet and roast until fork tender, 25 minute.
  • Whisk honey, lime juice, and cinnamon together in a small bowl while potatoes roast.
  • Once potatoes are tender, coat with glaze and roast 5 minutes more.
  • Garnish with cilantro.

  2. Excellent! I made this as instructed with the exception of spraying cubed potatoes with cooking spray instead of oil & baking @ 450. I have also made this with a bit of ground cumin added to the glaze, so tasty! Thanks for sharing!
     
  3. This was made using a combination of purple and orange sweet potatoes. While the recipe says to toss with oil it doesn't specify how much or what kind. I did drizzle them with olive oil, roasted and then drizzled again with a little oil about 1/2 way through the cooking process. I used the juice of 1 lime and maybe a little over 1/2 the honey called for. The flavor is wonderful with a little kick from the cayenne. I would not hesitate to try this recipe again.
     
  4. Roasted sweet potatoes are my nemesis right now!!!! I have tried many recipes to find the perfect way to prepare them!!! This recipe's glaze is wonderful-tasting!! The flavors are perfect with a little hint of heat from the cayenne! I have been trying a lot of recipes with a 450 F roasting temp and I was getting a lot of burned potatoes. This time, I cut my potatoes into about 1/2 inch cubes and with the lower temp on this recipe, the potatoes did not burn but it did not get them crisp either. They were sort of the consistency of mashed sweet potatoes. So with all of my sweet potato trials, I think that I would keep the 450 F temp with a little bit smaller cubes plus use this glaze and I am gonna keep trying for the perfect roasted sweet potato recipe!! Thanks for posting!!!
     
  5. There are very few sweet potato (or, for me, yam) recipes I've made where I actually peel the potatoes, & this one was no exception! Love those peels! Other than that, however, I did follow the recipe (well, I did omit the cilantro) & the resulting roasted vegetables were GREAT! Thanks for sharing & definite recipe keeper!
