Roasted Tomatoes on Goat Cheese

- 2 cups grape tomatoes (halved lengthwise)
- 2 shallots (sliced)
- 2 tablespoons extra virgin olive oil
- 2 goat cheese (4 ounce each)
- 2 -4 tablespoons balsamic glaze (recipe follows)
- 2 tablespoons fresh parsley (or basil)
- salt & pepper (to taste)
- balsamic glaze
- 1 cup balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon black peppercorns (crushed)
- 1 tablespoon fresh rosemary (chopped)
directions
- Preheat oven to 450°F.
- Toss halved tomatoes & sliced shallots with olive oil.
- Arrange in a single layer on parchment paper on a sheet pan.
- Roast in centre of oven for about 10 minutes or until it begins to caramelize.
- Season with salt and pepper to taste and let cool.
- To make balsamic glaze pour vinegar into a small saucepan and bring to a boil.
- Lower heat and simmer for 5 minutes.
- Stir in remaining ingredients and simmer for 2-3 minutes.
- Cool and strain into a covered container and place in a cool, dark cupboard where it will keep indefinitely.
- Makes 1/2 a cup.
- To serve place cheese logs on a dish.
- Top with tomatoes, even warm if you so choose.
- Drizzle with balsamic glaze.
- Garnish with herbs.
- Serve with toasted baguette slices or crackers.
