ingredients
- 4 medium vidalia onions or 4 medium other sweet onions, each peeled and cut into 8 wedges (about 2 pounds)
- olive oil-flavored vegetable cooking spray
- 1 teaspoon dried thyme
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon fresh ground pepper
- 1 tablespoon balsamic vinegar
directions
- Preheat oven to 350°F.
- Arrange onion wedges on jelly-roll pan coated with cooking spray; lightly coat onions with cooking spray.
- Sprinkle thyme, salt, and pepper over onions.
- Bake at 350°F for 30 minutes.
- Turn wedges over; bake an additional 25 minutes or until onions are tender.
- Spoon onions into a serving dish and drizzle with vinegar.

I love to knit, smock, sew, etc., but my favorite hobby of the moment is traditional rug hooking. This is a sample of what I do.? It's called "November".? I dyed most of the wool myself. It is made from wool flannel, cut into strips a little less than 1/4" and then worked into a linen backing. This is my 3rd rug.
