Roasties Yam Style
"Basically the same recipe for English roast potatoes, but with yams. My husband is English and loves Sunday roast but he prefers these to regular potatoes."

- 2 large yams or 2 large sweet potatoes
- 1 tablespoon flour
- olive oil, to coat
- salt and pepper
directions
- Peel and quarter yams. Place in large pan with cool water. Bring to boil, cook for 10 minutes. Drain and season with salt and pepper if you like. Sprinkle flour and oil on cooked potatoes and with lid on shake pan to evenly coat. Place on oiled cookie pan and cook at 425F for 25 minutes. The outside will be brown maybe even a little burnt and inside soft and sweet.
