directions

  • Spread each tortilla evenly with 1 ounce of cream cheese.
  • Cover with thin layer of preserves and sprinkle with cheddar cheese.
  • Arrange spinach leaves and turkey over cheddar cheese.
  • Roll up tortillas and trim ends.
  • Cut crosswise in half or into 1 inch pieces.
  • Wrap in plastic wrap and refrigerate.

  1. Very tasty combo! I cut it down to one "roller" for my lunch today. I used some leftover roasted chicken breast (shredded) instead of the sliced turkey and a mix of greens (which included spinach) because they were what I had on hand. Love the sweetness added by the peach preserves. Thanks for sharing!

  4. This is a perfect lunch. I was hesitant about the spinach, because i'm not a huge spinach fan, but this was great - all the tastes were perfect together. I wouldn't change a thing!

The sweetness of the peach preserves matches amazingly well with the turkey. I used drained soy yogurt in place of the cream cheese to make it healthier, and I also used soy cheddar cheese. I didn't really measure any of the ingredients, but just estimated the amounts. I'm sure this recipe would be great with any kind of jam or preserves. I can't wait to try it again!
