  1. Preheat a grill to medium high heat.
  2. Brush the chicken with the olive oil and sprinkle with the rosemary.
  3. Grill until charred and cooked through (6-8 minutes per side). Remove from grill and allow to cool slightly.
  4. When cooled, slice the chicken and toss with the tomatoes, onions, and lemon juice. Season with salt and pepper.
  5. Serve wrapped in the lettuce leaves.
