- 1 chicken breast
- 2 tablespoons olive oil
- 1 teaspoon fresh rosemary, finely chopped
- 1⁄2 cup cherry tomatoes, halved
- 1⁄4 cup red onion, sliced
- 1 tablespoon lemon juice
- 2 large lettuce leaves, intact
- salt and pepper, to taste
directions
- Preheat a grill to medium high heat.
- Brush the chicken with the olive oil and sprinkle with the rosemary.
- Grill until charred and cooked through (6-8 minutes per side). Remove from grill and allow to cool slightly.
- When cooled, slice the chicken and toss with the tomatoes, onions, and lemon juice. Season with salt and pepper.
- Serve wrapped in the lettuce leaves.
