Rosemary Oven Fries

"My dad's recipe. They make a great side dish that can be served with just about anything - my family loves them with bbqed steak and grilled veggie skewers, or fried perch and mushy peas. I love them because they're vegan and take no time to make!"

  • 4 potatoes (I like russet or Yukon gold)
  • 2 tablespoons oil
  • 1 tablespoon dried rosemary
  • salt and pepper, to taste

directions

  • Preheat oven to 425.
  • Scrub the potatoes. Peel, if you prefer skinless fries.
  • Slice potatoes lengthwise into strips. Place in large mixing bowl.
  • Pour oil over potatoes. Sprinkle rosemary, salt, and pepper over potatoes and toss to coat.
  • Line a baking sheet with tin foil and coat with non-stick cooking spray.
  • Arrange potatoes in single layer on sheet and bake for 10-12 minutes. Turn potatoes, and continue baking for another 10-12 minutes.

  1. As there are only few potato varieties in Germany, I used what I had on hand - medium sized organic potatoes. Love this recipe - one of my favourite ways to have potatoes!<br/>Made for Honor Thy Mother - and be gluten free, too! of the Diabetes Forum.
     
  2. These are very good.I use olive oil.I usually season with my own cajan seasoning.Note to "Tinkerbell" I grind my rosemary in a spice grinder.You will get the wonderful flavor ,but not the sticks.I put all in zip bag to coat then just toss bag.
     
  3. I used the potatoes I had on hand, not sure what type they are, but they were pretty small (about 1/2 the size of a baker) so I used 7 of them with the remaining ingredients staying the same. Now, I have to preface this by warning that I am the only one in the house that actually LOVES rossemary. My boys (DH & DS 15)complain every time I use it that I must've rolled their meat or in this case, fries, in the dirt cause there are little sticks all over it. lol They do put up with me using rosemary, however, they usually wipe theirs off before eating. They loved the flavor & texture of these fries & I've already been asked to make them again. I may use a different herb on their portions next time, but I'll definitely use the rosemary on mine. I think it was a very sophisticated way of eating a fry & I loved the flavor. They browned up nicely & were so quick & easy to make. Thanks for sharing your dad's recipe, KDub!   4. This is a lovely idea. We really enjoyed the rosemary flavour, although next time I would add more rosemary (I used fresh rather than dried). They also needed longer to cook through- around 30 minutes. Made for PAC Spring 2009.

I'm a university student in British Columbia. I've been a vegetarian for almost three years, and a vegan for two. I make an effort to purchase only organic foods but sometimes find that hard on a student budget! I mostly enjoy baking but have branched out into cooking a bit in the past couple of years.
