  • Grate the carrot and apple.
  • Mash the banana.
  • Mix together in a bowl whole wheat flour, bran and wheat germ. Add the cinnamon, baking soda and baking powder.
  • Add to the flour mixture the egg substitute and milk. Mix well.
  • Add the grated carrot, grated apple and mashed banana. Stir well.
  • Add the margarine, vanilla and raisins. Stir again.
  • Preheat oven to 350°F.
  • Grease a muffin tray (12) with cooking spray.
  • Spoon mixture evenly into the muffin tray.
  • Bake for 45 minutes. Cool and remove from tray.
