ingredients
- 1 cup whole wheat flour
- 1 cup natural bran
- 1⁄2 cup wheat germ
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 50 ml egg substitute
- 1 cup low-fat milk
- 1 banana
- 1 apple
- 1 carrot
- 1 teaspoon vanilla
- 1 tablespoon margarine
- 1 cup raisins
directions
- Grate the carrot and apple.
- Mash the banana.
- Mix together in a bowl whole wheat flour, bran and wheat germ. Add the cinnamon, baking soda and baking powder.
- Add to the flour mixture the egg substitute and milk. Mix well.
- Add the grated carrot, grated apple and mashed banana. Stir well.
- Add the margarine, vanilla and raisins. Stir again.
- Preheat oven to 350°F.
- Grease a muffin tray (12) with cooking spray.
- Spoon mixture evenly into the muffin tray.
- Bake for 45 minutes. Cool and remove from tray.
