  1. Grate the carrot and apple.
  2. Mash the banana.
  3. Mix together in a bowl whole wheat flour, bran and wheat germ. Add the cinnamon, baking soda and baking powder.
  4. Add to the flour mixture the egg substitute and milk. Mix well.
  5. Add the grated carrot, grated apple and mashed banana. Stir well.
  6. Add the margarine, vanilla and raisins. Stir again.
  7. Preheat oven to 350°F.
  8. Grease a muffin tray (12) with cooking spray.
  9. Spoon mixture evenly into the muffin tray.
  10. Bake for 45 minutes. Cool and remove from tray.
